Our European-Style Artisan Bread Flour starts with our Sir Galahad Flour, an unbleached flour with the medium-level protein (11.7%) favored by European bread bakers. Next we add just a bit of our organic whole wheat flour, to stimulate yeast growth; and finally, the mixture is touched with the perfect amount of ascorbic acid, which helps provide yeast with the acidic environment it loves.
