The Ryefield Farm is situated on the shores of Lough Ramour about 45 miles Northwest of Dublin. On the farm, the Brodie family produces top-quality milk for their tender, hand-rolled Boilie cheeses. They make two varieties of Boilie on Ryefield Farm; one from cow's milk and the other from goat's milk. Each is naturally preserved in sunflower oil, delicately flavored with herbs and garlic, and packed in glass jars. Boilie is wonderfully delicate and is soft enough to spread. Its farm-fresh taste is made possible by the sunflower oil which preserves the cheese's youth. The goat's milk version is tangy and reminds one of a fine French chevre. Suitable for vegetarians.- Made from pasteurized goat's milk.
