The unique combination of milks gives Cacciotta Toscana al Tartufo a flavor that is slightly sharp from the ewes milk, and rich from the cows milk. Added to that is that unmistakable earthy flavor and heady fragrance of truffles (Tartufo), which makes Bianchetta a spectacular cheese. The term Caciotta refers artisan cheeses made using traditional methods, and Toscana indicates the cheese originated in Tuscan. Caciotta Toscanas are ripened for at least 20 days in a damp environment, turned and washed frequently, they are very young and develop a very pale and thin crust.
